I would not recommend using the Swagman XTC4 Bike Rack, # S64665, with your 2001 Volvo V70 T5 if it has a class I or class II trailer hitch with a 1-1/4 inch receiver. This is a pretty heavy bike rack at 65 lbs that was designed for 2 inch trailer hitch receivers only. You most likely have a 1-1/4 inch receiver, but if you have a trailer hitch with a 2 inch receiver, then I would not recommend using a hitch extender.

I am a little confused because a slider hitch would be in the truck bed not on the 5th wheel trailer. It sounds like maybe you have a telescoping pin box on the trailer. Regardless, when a 5th wheel hitch doesn't lock around the trailer king pin there are some things you can check on the hitch.
First, make sure that the jaws of the hitch open and close freely. If they do not or it is difficult to open and close the jaws then the hitch may need to be lubricated.

Based on your description there is an issue with the wiring running from the 7-way connector to the trailer brakes on your trailer, but I will say this is a very odd issue.
I recommend tracing the trailer brake output wire from your trailers 7-way looking for any damage or any places it might be getting pinched when the trailer is hitched to your ball mount. Replace any damage sections with # 10-1-1 and heat shrink butt connectors # DW05745-5.

Typically there are several different sets of holes that can be used to secure the pin box of the trailer to the trailer frame. You should be able to remove the hardware holding the pin box and then reinstall it higher on the trailer frame to allow the trailer to sit level.
Otherwise you would need to go with a shorter height fifth wheel hitch or lift the suspension of the trailer.

When towing a 5th wheel trailer you will need to have at least 5 inches from the tops of the bed sides to the bottom of the trailer overhang. To achieve this you can not only raise the hitch in the truck bed but you can also lower the pin box on the trailer (on most trailers).
It is also possible that this is happening on turns if the pin box is long enough and the trailer is not up high enough. the pin box then would hit the bed sides.

A hitch stabilizer like the etrailer Anti-Rattle Hitch Stabilizer for 2" Hitches # e99007 is a great place to start with this kind of issue. I think you may have twisted the weld nuts that are attached to the frame of your vehicle. These weld nuts are needed for the M12 bolts that are part of the installation kit you received with the trailer hitch. One thing you can try is hitch up to a fifth wheel trailer, remove the pins of the feet of the hitch and then use the trailer's landing gear jacks to raise the nose of the trailer and hitch out of the rails in the truck bed. The straighter the truck and trailer are and the more level they are the easier it will be to hook up and unhook the 5th wheel trailer. When using a Revolution or Sidewinder pin box you pretty much have to be straight. The reason is the wedge that locks out rotation of the hitch is in the way. You could remove the wedge to hookup or unhook as long as you remember to put in back into place every time.

I spoke with my contact at Draw-Tite and he said that on the Draw-Tite trailer hitch # 75270 you will want to use the 5/8 inch pin hole which is the one closest to the crosstube. The pin hole closest to the trailer, a 1/2 inch pin hole, is not used at all.

If this noise occurs during starts and stops or any time there may be back and forth movement of the trailer then it is normal to get some metal to metal contact as the trailer king pin bumps around in the jaws of the hitch. The double jaw design of the Reese 5th wheel hitch, # RP30051, is secure but it is not so tight that it will eliminate all movement.
